Bourbon balls - a real favourite from the south

Bourbon balls is the name for two different types of bite-size confectionary now quite famous in the US which has as the name suggests, bourbon as the key ingredient.
I have included the best two recipes I’ve come across with a chocolate and coffee twist, and I have to tell you they are both magnificent!
Whilst it's a famous US recipe, I’ve substituded Scotch whisky for the Bourbon (as I’m from England), and believe me they are just as “mouth wateringly good”
Bourbon ball recipe
Bourbon balls, made with chopped pecans, vanilla wafers, cocoa, and corn syrup, along with bourbon and powdered sugar.
Ingredients
- 1 cup finely crushed vanilla wafers
- 1 cup finely chopped pecans
- 1 1/2 cup of confectioners' sugar, divided
- 2 tablespoons of unsweetened cocoa
- 2 tablespoons bourbon
- 1 1/2 tablespoons light corn syrup
Preparation
Combine vanilla wafer crumbs, chopped pecans, and 1 cup of the confectioners' sugar.
In a measuring cup, blend the Bourbon and corn syrup; stir into the dry mixture.
When thoroughly blended, cover and refrigerate for an hour or more.
Sift about 1/2 cup of confectioners' sugar onto a large piece of waxed paper.
Shape small amounts of the dough into balls then roll in powdered sugar.
Store tightly covered in the refrigerator. These can be frozen.
Makes about 3 dozen.
Coffee Bourbon Balls Recipe
Coffee Bourbon Balls Ingredients
- 1/4 cup Instant coffee
- 1/4 cup Bourbon
- 1 tablespoon Water
- 2 cup Fine vanilla wafer crumbs
- 1 cup Chopped walnuts
- 3 tablespoon Light corn syrup
- 1 cup Confectioners sugar
- Salt
Time: 3 hour Qty: 36
Coffee Bourbon Balls Instructions
Dissolve coffee in bourbon and water in a bowl.
Add remaining ingredients and mix thorougly.
Roll into balls, using a rounded teaspoon of mixture for each.
Store in tightly covered container for several days, then roll in additional confectioners sugar.
Store in an airtight container.
